Holly's Savory Sausage and Egg Bake

bulk pork/turkey sausage (cooked and drained)

sliced mushrooms (4 oz)

medium green onions, sliced (about 8)

tomatoes, chopped (1 1/2 cups)

shredded mozzarella cheese

biscuit mix (ie. Bisquick)

milk

salt

1 1/2

tsp

chopped fresh oregano or 1/2 tsp dry oregano

eggs (or equivalent in Egg Beaters)

Heat oven to 350 degrees. Grease rectangular baking dish (13x9x2). Layer sausage, mushrooms, onions, tomatoes and cheese in dish. Stir remaining ingredients until blended. Pour over cheese. Bake uncovered 30-35 minutes or until golden brown and set. Makes 12 servings.
