Fried Green Tomatoes

(My mother made these when I was growing up. I never served them to our kids, but Larry and I both like them.) -Jen Degner

green tomatoes

flour

1 1/4

tsp

salt

pepper, to taste

bacon fat (or healthy substitute, if desired)

wash tomatoes, but do not peel. Cut into 1/4 inch slices. Mix flour, salt and pepper and roll tomatoes in mixture. Fry, brown, on both sides. Serve warm.
